Chicken with Olives and Preserved Lemon

All the ingredients included in this recipe support sex hormones balance, cortisol balance, thyroid function (except shive and spring onions) and perimenopause/menopause symptoms. If you suffer from hypothyroidism, do not use onions. 




Ingredients

  • 2 organic chicken legs 

  • 1 preserved lemon

  • 1 handful of green or red olives  

  • 3 large table spoons of olive oil or 1 large table spoon of ghee

  • 1 handful of fresh coriander , chopped 

  • 3 garlic cloves , chopped 

  • 1 onion , chopped 

  • 2 pinch of saffron 

  • 1 pinch of sea salt 

  • 1 pinch of black pepper

  • 1/2 tea spoon of curcuma ( powder ) 







Method

  1. Wash the chicken legs with warm water and coarse sea salt .


  2. Marinade 


  3. Mix olive oil/ghee , coriander , garlic , onion , saffron , sea salt , black pepper , curcuma in a big bowl 


  4. Add the chicken legs in the big bowl and massage it with the marinade for 3 minutes ; 


  5.  Let stand for 3 hours . 


  6. After 3 hours , transfer the big bowl’s content (chicken legs and marinade ) into a covered saucepan and cook on low heat during 30 minutes  . 


  7. Then add preserved lemon and olives and cook for another 15 minutes .


  8. Enjoy
