Coconut Chia Pudding

Ideal for an healthy breakfast
All the ingredients included in this recipe support sex hormones balance, cortisol balance, thyroid function and perimenopause/menopause symptoms. If you are allergic to gluten, replace oat bran by by blended millet / buckwheat / quinoa

Ingredients
2 large table spoon of chia seeds
1 cup of coconut milk
2 large spoon of oat bran
( replace by blended millet / buckwheat / quinoa if you are allergic to gluten )
1 handful of berries
( e.g. mix of raspberries and blueberries )
1 table spoon of coconut flakes
2/3 fresh mint leaves
Method
The night before : mix chia seeds , coconut milk and oat bran ( or blended millet / buckwheat / quinoa ) in a bol ; let stand in the fridge during all night .
In the morning : add berries , coconut flakes and fresh mint leaves on top
